You can buy it in advance, or if you two are going to walk together at some point during or at the end of the date, you can even pick one up if you see a really nice one while you're walking (those are awesome gestures, and women love spontaneity when it's not embarrassing).
You can actually scout the place where you're going to walk with her beforehand, to see where are the best flowers so you can pick one.
